Logs show that the demofile was created and saved within that folder therefore, it should be in your folder. It is your responsibility to ensure demos are being saved properly and that there is enough space on your device for the demos to save. reviewed with @Bnjemann & @Tilin

Open steam application, go to library then right click your Garry's Mod game, hover manage then click 'Browse Local Files' from the secondary popup menu. Then from that folder directory click into the following directories, garrysmod → data → phdemos That is where the demos are stored.
