I have a few options for what I could buy/use:
Graphics Card - Either a GTX 1060, a GTX 970, an RX 480 or stick with my GTX 760. Other options are open but I would like to run games like Forza Horizon 3 on reasonable settings with no frame rate drops.

CPU - Either an i5 6500 or a more expensive i7 4790k, other options are also welcome for this too.

I've been looking into it but it's confusing me. I need help.

GTX 1060 - AMD is always wank with their 480s and it's worth spending a bit more and not get the 970, you should get rid of the 760.
i5 6500 - It's a Skylake and the i7 is somewhat outdated with it's Haswell. I'm sure that the i7 is better than the 6500 (and the good old "i5 is better on gaming than i7") but doesn't really matter, get the Skylake and make sure you get DDR4 ram with it along with a compatible motherboard.

I've ordered a Skylake i7 6700k 4.0 Ghz processor and a Nvidia GTX 1060 6GB graphics card.

With everything else on top of the processor and graphics card like ram, the case, etc, i've spent about £800/$1038/€923.
