I did join a good org but most the time I cant even grow the coca leaves before Im raided again lol so unsure. I did SS, EMS and now can do policing so im not sure if im jumping too far ahead

Police and EMS are also a good start, though it's a lot longer of a grind if your end goal is to save up for a decent car. If you are constantly being raided, try and organize an org base, that way you will have a lot stronger of fighting power - though if you do still have the new player tag, basing alone isn't a bad option as a lot of experienced players have respect for your grind!
