How do I make my cars look more like this

In game my candy metallic looks boring and terrible

To more like my single player candy metallic.

Do I need to adjust my settings?

Not too sure really, running with mat_specular 1 instead of 0 made paint jobs a lot nicer for me you could try that out, it causes some purple and black errors across the map though but I just get used to them in the end.

If you have TDM from workshop, you might try disabling that. GMod is a bit stupid when it comes to loading content for a server and you never know where it might draw content actually from.

It also depends on time of day/weather as to how the lighting will be reflected off the vehicle.
