I’m talking like traditional British Steak Pie and mash.
In London, Parsley liquor is preferred but up north And in other places, gravy remains the condiment of choice.
Parsley liquor is a pie and mash shop staple sauce made from parsley, it’s sometimes made from the water Eels are boiled in but this is a bygone tradition for a lot of pie and mash shops.
Tbh, I’d prefer parsley liquor, as the pie already has gravy in it.
